Grilling is by far my favorite method of cooking. It’s easy, it takes me outside, and it usually means a party is happening. The smell of charcoal and the sound of sizzling proteins always put me in a good mood. During a recent beach vacation, I was inspired by all the fresh seafood available and was eager to throw some of it on the grill. So I whipped up these shrimp skewers with a simple marinade and they were certainly a crowd-pleaser. The marinade is so effortless and only requires a few ingredients. I skewer the shrimp so they are easier to turn on the grill. The shrimp take mere minutes to cook and they are succulent and delicious. For dinner, I serve these shrimp skewers with a simple side dish like rice or a green salad, but you can also serve them solo as an appetizer, that works great too!
Ginger-Lime Marinated Skewers
Serves 4 to 5
Ingredients
1 pound shrimp, peeled and deveined, tails left on
2 tablespoons soy sauce
2 teaspoons sesame oil
Juice of 2 limes
1 tablespoon brown sugar
1 teaspoon crushed red pepper flakes
1 tablespoon grated fresh ginger
3 large scallions, chopped
4-5 bamboo skewers
Directions
Before you can grill the shrimp, you need to soak the skewers for two hours in water. This will ensure they don’t flare up on the grill.
Peel and devein your shrimp, if they haven’t been already.
Skewer the shrimp. My shrimp were relatively small so I fit about seven to eight per skewer. Place the shrimp skewers in a shallow baking dish.
Next mix together the soy sauce, sesame oil, lime juice, brown sugar, red pepper flakes, ginger, and two of the chopped scallions.
Pour the marinade over the skewers. It won’t look like a lot of marinade, but it is so flavorful you don’t need a lot.
Cover the dish with plastic wrap and transfer the shrimp to the refrigerator. Let the shrimp marinate for at least 30 minutes and no longer than an hour.
Once the shrimp have marinated, place them on a preheated grill. Grill 3-5 minutes per side, depending on the size of your shrimp.
When the shrimp are done, they will be slightly pink and completely opaque with some nice char marks.
Sprinkle the remaining scallions over the shrimp skewers as a garnish and serve immediately. Enjoy! 🙂
