2 cups all-purpose flour
1/2 cup sugar
2 medium (1 cup) carrots, shredded
2 teaspoons baking powder
1 teaspoon salt
1/2 cup Land O Lakes® Butter, melted
3/4 cup milk
2 Land O Lakes® Eggs, slightly beaten
1 teaspoon vanilla
1/4 cup honey
2 tablespoons Land O Lakes® Butter
Heat oven to 350°F. Grease or line 12-cup muffin pan with paper baking cups; set aside.
Combine flour, sugar, carrots, baking powder and salt in bowl. Stir in all remaining muffin ingredients just until moistened.
Spoon batter evenly into prepared muffin pan cups.
Bake 22-26 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes.
Combine honey and 2 tablespoons butter in bowl. Microwave 30-40 seconds or until butter is melted. Stir until well mixed.
Dip warm muffins into honey mixture. Serve any remaining topping with muffins.
