Ingredients
2 small acorn squash, cut in half, seeded
4 teaspoons firmly packed brown sugar
3/4 pound lean ground beef
1 medium apple, cored, chopped
3/4 teaspoon onion salt
1/2 teaspoon ground cinnamon
1/4 teaspoon curry powder
Directions
Place squash halves into ungreased 9-inch square microwave-safe baking dish, cut-side up. Place 1 teaspoon brown sugar into each squash half. Cover with plastic food wrap. Microwave on HIGH, turning once, until crisply tender (5 to 8 minutes).
Meanwhile, place ground beef in 10-inch skillet. Cook over medium-high heat, stirring occasionally, until browned (3 to 4 minutes).
Add all remaining ingredients. Continue cooking, stirring occasionally, until apple is softened (2 to 3 minutes). Drain off fat.
Uncover squash; spoon about 1 cup ground beef mixture into each squash half. Cover; microwave on HIGH, turning once, until squash is tender (7 to 8 minutes).
