Ingredients
3 cups green apple chunks (approximately 3 medium Granny Smith apples)
1-1/2 pounds red bliss potatoes
1 cup mayonnaise
1/2 cup plain low-fat yogurt
1-1/2 tablespoons cider vinegar
1-1/2 tablespoons yellow mustard
2-3 stalks finely chopped celery
1 cup finely chopped red onion
1/3 cup sweetened, dried cranberries
Salt and pepper to taste
Directions
In a large bowl, stir together mayonnaise, yogurt, vinegar, mustard, salt, pepper, celery, onion, and cranberries; cover and refrigerate.
Cook potatoes in simmering water until done, about 15 minutes; drain and cool; chop. Gently stir potatoes and apple chunks into mayonnaise mixture. Cover and chill until served
