Ingredients
2 1/2 cups apple chunks (about 2½ to 3 medium apples)
3 cups water
1 1/2 cups Cous Cous
1/2 cup chopped parsley
1/2 cup lemon juice
1/2 cup olive oil
1/3 cup pine nuts
1/3 cup dried currants
1/3 cup golden raisins
Zest of one lemon
1/2 teaspoon granulated garlic
Salt and pepper to taste
Directions
In a large saucepan, bring water to a boil. Add cous cous and stir.
Remove from heat and cover. Let sit for 5 minutes. Fluff with fork.
Combine all other ingredients and toss with cous cous.
