Ingredients
3 lb pork loin roast
4 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, chopped
2 cups Tree Top Apple Juice
1/4 cup honey
1 tablespoon dry oregano
1 teaspoon dry rubbed sage
2 tablespoons Dijon mustard
1 teaspoon lemon juice
1 tablespoon Worcestershire sauce
Salt and black pepper to taste
Directions
Preheat oven to 350°F.
Begin making the glaze by adding olive oil, onions and garlic to a medium-size saucepan and cooking on high heat for 3 minutes. Add apple juice and cook until 1 cup of liquid remains, about 15 minutes.
While the glaze is cooking, place a large sauté pan on the stove top. On high heat, add 1 tablespoon of olive oil and sear pork on all sides for about 5 minutes. Place in oven and roast approximately 30-45 minutes or until internal temperature shows approximately 135° on the instant read thermometer.
While the roast is cooking, finish making glaze. Add honey, dry oregano and dry rubbed sage. Cook until glaze becomes thick like syrup. Add the Dijon mustard, lemon juice, Worcestershire sauce, salt and black pepper. Remove from heat and glaze pork 3-4 times during roasting process. (Note: This glaze recipe also goes well with chicken.)
Slice roast and serve.
