SWEET POTATOES
1/2 cup Sue Bee® Honey
4 pounds sweet potatoes, peeled and cut into 1-inch pieces
1/4 cup brown sugar
4 tablespoons unsalted butter
1/3 cup heavy cream
1 teaspoon kosher salt
1 tablespoon pure vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups marshmallows
TOPPING
2 tablespoons Sue Bee Honey
1/4 cup brown sugar
1/2 cup flour
4 tablespoons unsalted butter
1/4 cup rolled oats
1/4 teaspoon ground cinnamon
Directions
Fill a large pot with water and bring to a boil over high heat.
Reduce to medium heat and add sweet potatoes. Cook until tender and drain.
Mash sweet potatoes until smooth.
Add Sue Bee Honey, brown sugar, unsalted butter, heavy cream, salt, vanilla, cinnamon and nutmeg. Mix until combined.
Preheat oven to 325 F.
Spread sweet potato mixture into a greased 8-by-10-inch casserole dish. Sprinkle marshmallows on top.
Prepare the topping by melting unsalted butter. Add Sue Bee Honey, brown sugar, flour, rolled oats and cinnamon; mix well.
Sprinkle topping over top of the marshmallows.
Bake for 25-30 minutes, until streusel or topping is crisp and marshmallows are golden brown.
