4 slices turkey bacon or bacon, cut into 1/2-inch pieces
2 cups instant rice
1 (10-ounce) package frozen chopped spinach, thawed, drained
1 (14 1/2-ounce) can chicken or vegetable broth
1 (15 1/2-ounce) can black-eyed peas, rinsed, drained
2 ounces (1/2 cup) shredded Land O'Lakes Cheddar Cheese
Cook bacon in 12-inch nonstick skillet over medium heat, stirring occasionally, until crisp (3 to 5 minutes). Drain.
Add rice, spinach and broth to same skillet. Cover; continue cooking until rice is tender and liquid is absorbed (4 to 6 minutes).
Stir in black-eyed peas. Continue cooking, stirring occasionally, until heated through (1 to 2 minutes). Sprinkle with cheese.
