Ingredients
1 egg separated
2 cups plain low-fat yogurt
1/2 cup Tree Top or Seneca Apple Sauce
1/4 cup sugar
1 teaspoon vanilla extract
2 teaspoons baking soda
1/2 teaspoon salt
1 3/4 cups flour
3 egg whites
1 pint (2 cups) blueberries, rinsed & patted dry
Directions
Add yogurt, apple sauce, sugar & vanilla to egg yolk. Stir with rubber spatula to mix, then stir in baking soda, salt & flour until blended.
Beat egg whites with an electric mixer until stiff peaks form. Stir 1/2 egg whites into the batter until blended. Gently fold in remaining until there are no white streaks.
Cook on griddle to desired brown-ness on both sides.
